Vinewatch Defenders is the game I keep coming back to. Most maps are open fields where you build your own path, so the enemies snake through whatever maze you construct. That single choice turns each level into a little puzzle before a single wave even arrives.
Towers have distinct roles — slowers, splash, single-target snipers — and the upgrade paths branch in ways that reward planning your maze around them. I lost plenty of runs early just from bad tower placement, which felt fair rather than cheap.
There's a light meta layer of permanent perks, but it never feels like a wall. Skill carries you further than grinding does, and that's exactly what I want from tower defence.
